Las Terceras. Development of a new business line

Abstract

Las Terceras [1] is a small business with more than 200 years of history. They are engaged in agricultural activity and in the production of Manchego P.D.O cheeses, which are made from the milk given from the livestock present on the farm. On their agricultural holding they cultivate a variety of crops such as wheat, barley and rye. Adding to this, they have an extense field of olive trees, which they sell to nearby cooperatives.
The business wants to diversify and develop a new product line by commercialising high quality olive oil made from the olives that grow in their fields, in order to have a product which gives them a suitable pairing with their cheeses. This project studies the best way to proceed in order to develop this new product line.
